I'm serving re-fried beans, rice, enchilladas and salad for 250 people. About how many pounds of ground beef for red enchilladas? The beans I figure about 27 pounds of dry pinto beans, and the rice I'm not quite sure. Please help thanks. |

Same weight of rice as beans. 1 pound ground beef per 4 persons. |
