I'm catering a friends wedding for 100 to 150 people. These are the ideas they gave me for food, ham, chicken, veggies, rice pilaf, mash potatoes, gravy, gravy, rolls, butter, salad for meal.
appetizer table with cheese and crackers, fruit platters. was wondering if you could give me some suggestions on ways to cook the ham, chicken, and a good vegetable. and any other ideas you may have. ps. reception starts at 4

The orange Dijon wedding chicken can be made ahead and frozen and is delicious- you would do 1 34 ounce raw breast piece per person. For the ham, about 50 pounds spiral slice bone in just roast with a brown sugar glaze. Green beans or broccoli for one veg (22 pounds ready to cook per 100); carrot blend or corn blend for the second.

Suggest you add one nice dip or spread for the appetizer table and a punch (or 2 if one is alcoholic).
