I'm responsible for the appetizers for an Italian dinner.
Expected 500 people to attend.
Please send me suggestions for quantity for the fallowing:
Cheese
Cheddar and
Monterey Jack cut in one inch squares, how many lbs.
Small mozzarella balls
Sliced Salami...lbs?
Sliced Mortedella....lbs?
Green onions, five green onions per plate... 50 plates
Olives..... 15 per plate
Mushrooms - marinated 15 per plate

Not clear on whether this will be on the tables plated or served buffet style-

Per person, I would plan 1 ounce cheeses- 1 inch cubes are too large, do smaller. 2 mozzarella balls. 1 ounce total meats. 1 gallon olives per 100. Same mushrooms. Onions are fine. For color. I would add cherry tomatoes, 2 per person. Some kind of green bean or artichoke condite.
