Beaver Tails or Elefant ears

i need to recipe for 100 beaver tails (fried sweet bread)

This is a proprietary recipe, so there are just clones. This makes about 100. You will need 2 5 gallon buckets to mix and raise it.

Ingredients

For the Dough:
6 cups warm water
1 cups yeast tsp. dry yeast
1/4 cup sugar
3 quarts warm milk
4 cups sugar
1/4 cup salt
1/4 cup vanilla
24 eggs
4 cups oil
12-15 pounds unbleached all-purpose flour
oil for frying
granulated sugar for dusting
cinnamon

In a large mixing bowl, mix together the yeast, warm water and pinch of sugar. Let stand for a couple of minutes to allow yeast to swell and dissolve.
Stir in the remaining sugar, milk, vanilla, eggs, oil, salt and most of flour and mix to make soft dough. Knead for 5-8 minutes (by hand or with a dough hook), adding flour as needed to form a firm, smooth, elastic dough. Place into a greased bowl.
Cover tightly. Let the dough rise in a warm spot about 30-40 minutes. Gently punch down the dough.
Pinch off golf ball sized pieces of dough, roll out into ovals. Let them rest, covered with clean dish towels. It takes at least 20 minutes for the dough to relax and be easy to roll out
Heat about 4 inches of oil in heavy dutch oven, wok or deep fryer. The temperature of the oil should be about 385 F. Test by tossing in a tiny bit of dough and see if it sizzles and swells immediately. If it does, the oil temperature is where it should be.
Stretch the ovals into a “tail”, thinning them out and enlarging them as you do. Add to the hot oil 1 or 2 at a time, depending on your fryer size (do not crowd).
Turn once to fry until the undersides are deep brown. Lift beaver tails out with tongs and drain on paper towels.
Fill a large bowl with a few cups of white sugar . Toss beaver tails in a sugar or sugar/ cinnamon mixture, shaking off excess. Alternately, toss in white sugar, sprinkle a little cinnamon and then squeeze some fresh lemon juice over it (known as a “Killaloe Sunrise”) .
Other ideas: Spread with Nutella, Maple butter, Apples mixed with cinnamon, Cream Cheese Frosting, confectioner's sugar.

Oil should be hot enough to get a medium to lightly dark brown color on them within 30 seconds. The dough will puff up, so you may want to cut a slit in the middle to cook the dough evenly. You could also press the middle down into the oil using tongs.

You can use whole wheat flour, but will need some extra eggs.

You can also roll out about 1/2 an inch in thickness and not stretched. The texture is more "bready" and compliments the cinnamon and sugar.
