Luncheon for 18 people,
Menu: Meat Tray, ham, turkey & cheese'
Vegetable Tray, carrot sticks, broccoli florets, olives, & celery Sticks.

Fruit Tray: cantaloupe, pineapple, grapes & strawberries.

Chicken Salad on Croissant
My question is how much should I prepared since they will be serving their selves ?

ham, 1 ounce per person
turkey, 2 ounces per person
cheese, 1 1/2 pounds
Chicken Salad, 2 quarts, 1 cup (takes just over a quart of chicken)
Croissant- 1 1/4 per person if large (cut some in half); or two smaller per person

carrot sticks, 1 ounce per person
broccoli florets, 1 ounce per person
olives, 1 quart
celery Sticks, 1 ounce per person
