picnic style wedding for 100/ 130

I'm planning on making my daughter's picnic-style wedding reception to be held outdoors and served at a picnic shelter. The plan is bbq pulled pork made ahead (two or three days ahead )in 5-6lb. batches,cooled,refrigerated and transported via coolers the morning of the reception, and re-heated in 18 qt roasters. Does this sound safe, and at what temp should they be held during service?

Safe as long as the batches are cooled quickly, kept below 40 degrees until reheated (transport in ice chests); reheated in preheated (20 minutes) roasters at 350 and turned down to 180 as soon as the temp in the middle is 165.
