This macaroni and hamburger dish is very similar to Johnny Marzetti. It consists of elbow macaroni and bits of cooked ground beef with sautéed onions and green peppers in a thick tomato-based sauce. You can make the meat base and the mac early, mix and bake to reheat, or mix all heat and serve loose.

Macaroni can be substituted with any pasta of similar size. The onions or green peppers may be omitted, or replaced with other vegetables or mushrooms. Whole, diced, or crushed tomatoes, tomato sauce, and tomato paste are typical sauce bases for this dish. Black pepper, herbs and Worcestershire sauce are added.

These are the basics for 100 people:

Peppers, green, large, raw 16 ea
Onions, fresh, large 10 ea
Oil, vegetable
1 cup
Beef, ground, cooked 20 lb (That's 40 cups)
Tomato sauce, 18 quarts
Tomatoes, diced, canned 6 cans (#10 can)
Salt, table, 1 tablespoon
Pepper, black 1 1/2 tsp
Garlic, granulated 1 tablespoon
Macaroni, 14 pounds

Chop green peppers and onions.
In a tilt skillet, sauté chopped green peppers and chopped onions in oil.
Add cooked ground beef.
Cook to 165778;F.
Add canned tomato sauce and diced tomatoes.
Add salt, pepper and granulated garlic.
Bring to 165778;F.
Cook pasta and add just before serving.
Hold at 140778;F.
