Roaster Lasagna

Ellen, I am making lasagna in a roaster for around 60 people. I use store bought sauce and doctor it up, my question: How much sauce? I usually add diced tomatoes, tomatoe sauce, tomatoe paste, wine, sausage, hamburger, and so on.... I've checked out the Lotsa Pasta page..and still am unsure. I've divided the recipes for 100 in half to estimate the amounts of cheese, cottage cheese, and other ingredients. But the sauce has me stymied....can you help?

The sauce is also about 1/2, I never go over 1 quart per pound of dry pasta, and often less, depending on the rest of the filling; for example, more ricotta means less sauce.

If the budget allows, ricotta rather than cottage cheese is a very good sub.

By the way, since the roaster cooks moister than the oven, don't get heavy handed with the sauce.
