40th Anniversary Reception
Bekah
06/06/13
My siblings and I are hosting a dessert reception for our parent's 40th Wedding Anniversary next Saturday. We're planning for 250. We're serving cheesecake with fresh berries for topping and coffee and hot tea. I've ordered the cheesecake but am trying to estimate how many pounds of strawberries, raspberries and blackberries I would need. I would be grateful for your advice.

Thanks!

Hi, Bekah, I have two suggestions. There are many folks your parents age who can't eat seeds/berries, so swap one of the berries for cherries.

Per cheesecake:
Fruit topping
10 ounces fruit, (they’re not in season here so I used frozen; pitted if cherries)
2 tablespoons lemon juice
1/4 cup sugar*
1 tablespoon cornstarch
1/2 cup water

I plan 23 pounds cheesecake per 100. I suggest you look at the dessert buffet page, and diversify the selection.
