Usually, if beef and a second meat are offered, you need about 5/8 beef and 3/8 second meat by boneless cooked weight. The very minimum you can make per person for parties is 6 ounces cooked, which is 8 ounces- 1/2 pound- raw boneless. So for 300 people you would need 150 pounds raw boneless, about 100 beef and 50 pork.
