chicken pot pie for 300
Hi Ellen, I am making Chicken Pot Pie for our Church. We will be feeding about 320 people. I will be using 15 oz oblong foil pans and topping with puffed pastry. I am looking for a recipe, using fresh veggies and fresh potatoes, using bone in chicken breasts and whole chickens. Do you have any suggestions?

This is the shopping list for 100 pies:
16 pounds Boneless, Skinless Chicken Breasts
16 stick of Butter, divided (use for both cooking veggies and for making sauce)
32 whole Carrots, peeled and diced small (16 cups)
32 Celery Stalks, diced small (8 cups)
16 cups Diced Cooked Potatoes
16 medium Yellow Onions, peeled and diced small (5 1/2 cups)
16 cups Frozen Peas
8 cups Frozen Corn

Mkae at least 1 pan with fried tofu to accommodate your vegetarian guests.

48 cups Chicken Broth, warmed
24 cups Whole Milk
8 cups Flour
1/2 cup Kosher Salt, more or less to taste
2 tablespoons Black Pepper, more or less to taste
3/4 cup dried parsley
1/4 cup Chopped Fresh Thyme
