Bridal brunch for 20
I am preparing a bridal brunch for 20 ppl, all women, a range of ages. We are doing bagels with cream cheese, whitefish salad, egg salad. I was going to do a relish tray to go with, including onion slices, tomato slices, cucumber slices, lemon wedges, capers & olives. About how much for the relish items? Also, I was going to do a bundt cake - do I need 1 or 2 if that is the only "dessert"? What if there are also petit fours?
(The menu also includes: orzo salad with roasted veg, potato casserole, strata, winter fruit, pumpkin bread. Thanks so much!!!
This is a big menu for 20 people, and does not even out as well as a larger group would, so you will have some left in order to have what everyone wants for first choice.

bagels, 2 dozen
cream cheese, 1 1/2 to 2 pounds
whitefish salad, 2 1/2 quarts
egg salad, 2 quarts

onion slices, 2 pounds, slice, soak overnight in sugar water
tomato slices, 3 pounds
cucumber slices, 3 large
lemon wedges, 10-12 lemons
capers,1 1/4 cups
olives, 2 1/2 cups, pitted whole

orzo salad with roasted veg,
potato casserole,
I would do only 2 of these, 2 9x13 each

winter fruit, use fruit tray page, scant tray for 25
pumpkin bread, 2-3 loaves

bundt cake, 2 if only dessert, 1 with other bites
