Hello, I am making appetizers from phyllo dough some of them are stuffed with cooked Scallops and others with cooked mushrooms. Can I bake them and then freeze them (after they cool off completely) and I am thinking to bake them frozen into 400 degree preheated oven the day of the party? will the scallops/mushrooms make the dough soggy? Please advise if you think of better way to do it.

I would freeze unbaked and bake from frozen day of. If the mushrooms are cooked quite dry, they will not sog the phyllo, but scallops do not reheat well and cooking them 3 times (cook, bake, reheat) is likely to result in pencil erasers.
