I never heard of baked ziti salad...

Seriously, if it is buffet you need more than if it is plated.
Use the plan for 100 tables, do 1/2 if it is buffet, about 5% less if it is plated. Amount of chicken depends on type of pieces, and it is detailed in the lists.

I forgot the comma between ziti and salad. I am going to use chicken breast tenders

OK, assuming buffet service,
6 pounds dry pasta plus about 1 quart sauce per pound plus add-ins

use the plan for 100 salad section and do 1/2 the amount for 100.

2 pounds raw tenders per 5.

Have 2 good rolls per person, or 1 1/2 plus a hot veg dish (12 pounds ready to cook).
