Hospitality Room for 250 people

Hi Ellen!
I'm hoping you can help me out with quantities needed to serve 250 people breakfast lunch and dinner. And maybe an idea of what to serve for dinner. All of the cooking will be done in our schools home-ec room. We normally use roaster ovens. Planning on baking the potatoes in the ovens that are in the class room. Most all of our food is donated by members so we rely on them to do some prep also.
Breakfast:
Donated Crock-pot breakfast cassaroles. I figured 25 of these.
muffins
bananas
cuties
other fruit?
Orange juice
yogurt cups?
Coffee
any suggestions?

Lunch:
Sloppy Joes for 250
I figured 62# of cooked ground beef
with 10# of canned sloppy joe sauce
cheese slice trays
coleslaw, I figured 25#
potatoe Chips
Fruit salad
cookies
Lemonade
water
coffee

Dinner:
small ck breasts in sour cream sauce
or other idea that would be simple and inexpensive and can cook in roaster ovens
baked potatoes
sour cream?
salad
salad dressing
roll
butter
cake? Pie? Bar cookies?
salad

any suggestions and quantities needed would be so very much appreciated.

Candace, 3 menus for 250 is a huge request. Are you willing to make a pro-level donation, say a quarter per person, to the site?

For example, you need to provide for vegetarians and the gluten-free, if you are planning on 250.

How many real ovens and refrigerators do you have access to? What is the age range of your crowd? Please write back.
