Menu for 150 people

I'm trying to plan my menu for my wedding in January. I expect somewhere around 150 people. Can you take a look at the following quantities and tell me where I am good and what I am over/under on?

Buffet style dinner:

3 Meat options
1) 40 lb beef roast
2) 40 lb boneless ham
3) 20 lbs smoked sausage

2 veggie/salad options
1) 20 lbs tossed salad mix
6 lbs croutons
6 lbs cheddar cheese
6 lbs cherry tomatoes
cucumbers? how many?
4 - 8oz bottles of each Ranch, Italian, and 3rd option?
2) 13 lbs green beans (purchased this summer and frozen)

2 starchy sides
1) Macaroni & Cheese (13 - 48oz boxes of macaroni plus homemade cheese to match)
2) 60 lbs new potatoes in butter sauce

24 dozen dinner rolls (for use as both a simple side roll and to be sliced in half for use as mini-sandwich option)
5 lbs butter

Hour between wedding and reception:
3 - 18" fruit platters
3 - 18" veggie platters

Immediately available drink options:
3 gallons sweet tea
5 gallons unsweet tea
3 gallons lemonade
2 1/2 lbs regular coffee (these people LOVE coffee)
1 lb decaf coffee
plenty of water/ice (never-ending supply)

Alcohol:
3 kegs of beer (brand TBD)
50 bottles white wine
25 bottles red wine
10 gallons of alcoholic punch (same alcoholic content as champagne)

In some places I feel like I am over and in others I feel like I am under. Any help would be appreciated.

You have done a nice job. There are a few chabges needed- for example, beef usually "outsells" ham, 5 to 3.

2) 40 lb boneless ham- 30
3) 20 lbs smoked sausage- fine

2 veggie/salad options
1) 20 lbs tossed salad mix- 16 plenty
6 lbs croutons
6 lbs cheddar cheese
6 lbs cherry tomatoes
cucumbers? how many? about 8
4 - 8oz bottles of each Ranch, Italian, and 3rd option? do 4 low cal Ranch
2) 13 lbs green beans (purchased this summer and frozen)- need about 35

2 starchy sides
1) Macaroni & Cheese (13 - 48oz boxes of macaroni plus homemade cheese to match)- you only need 12-15 pounds macaroni, 1 quart sauce and 1 pound cheese per pound of pasta
2) 60 lbs new potatoes in butter sauce- 45 probably plenty

24 dozen dinner rolls (for use as both a simple side roll and to be sliced in half for use as mini-sandwich option)
5 lbs butter
OK, Do add 4 bottles mustard- some spicy, and same squeeze bottles mayo

Hour between wedding and reception:
3 - 18" fruit platters
3 - 18" veggie platters
Add cheese trays- about 12 pounds cheeses, some can be balls or logs, and 9 pounds crackers

Immediately available drink options:
3 gallons sweet tea
5 gallons unsweet tea
3 gallons lemonade- probably 6
2 1/2 lbs regular coffee (these people LOVE coffee)
1 lb decaf coffee
plenty of water/ice (never-ending supply)

Alcohol:
This is quite a lot of alcohol for this size party.
3 kegs of beer (brand TBD)- this is 120 people's worth if full kegs
50 bottles white wine- 100 people's worth
25 bottles red wine- 50 people's worth
10 gallons of alcoholic punch (same alcoholic content as champagne-OK
With this much punch, you could cut the wine and beer by at least a third.

How much fried chicken, green beans, instant mashed potato, rolls, tea fir 150 people. Plates to be made. Need to know quantity to purchase and prepare

Assuming 2 pieces, or a quarter chicken per person,

chicken pieces, bone in, 110 pounds
green beans, 24 servings per #10 can
instant mashed potato, consider potato salad instead- no gravy- 6 gallons
rolls, 2 per person
tea- 8 ounces plus ice for each 12 ounce glass, about 1 gallon per 15- 1/3 unsweetened
