I am making chicken cordon bleu for my daughters wedding and I want to know if I can put it all together ahead of time then freeze it and cook it that day. Also, we are also having smoked tenderloin so I was thinking 60 pounds of each meat would be sufficient for 175 people.

I have only used professionally prepared frozen cordon bleu. Take a look at my 2 well-tested precooked frozen chicken recipes for ideas.

If you decide to do home-made, be sure you pre-test with a family run. Also, for food safety, you can't partially pre-cook and use a home freezer- it doesn't clear the meat of potential germs, and then doesn't freeze fast enough to prevent growth.
loin is very popular, do at least 75 pounds raw, and definitely have someone slice and serve the first round (2-3 lines for 175 people).
