Meat quantities
I am catering a wedding for 400 people we will be serving a 1/2 chicken breast with stuffing and sliced porkloin,how do you know the amts when serving 2 meats,or do you think we have to figure 1 piece of each for each guest? We will be serving the meat.I know you go by ounces,but it is so hard when you are trying not to have a lot left over.

Deb, for this situation, plan 1 small piece of chicken per person, some will take none, some will take 2, then 1 pound boneless raw pork per 4. Some left, but likely not too much.
