I have a catering job for 80 people coming up, I am just starting out so don't want to run out of food but don't want a lot of left overs either.
here's what they want : entree's 1. pulled pork
2. burgers
3. hot dogs
4. chix quarters
sides: 1.corn on the cob

Chet, 4 entrees for 80 people is a lot, that means you have to make more to make sure everyone gets his/her first choice the first round. Lots of leftovers! Most caterers do at most 3 for even 200 people. If the hosts agree to eliminate the burgers, which makes great sense with the pulled pork, you can do the whole meal without grilling, which eliminates one whole person from the crew.

5. potato salad
are all covered on the plan for 100 page. Use 4/5 the amount for 100.

Corn on the cob, 1 ear per person, plus 10%.
