This is a barbecue wedding buffet, we will be serving ribs,brisket,pulled pork, chicken breast, potato salad and fruit bowl. I am going to oven roast onions,zucchini,peppers and mushroom. These are all big eaters. How many of each veggie shall I buy.

onions, 1 pound per 6
zucchini, 1 pound per 8
peppers- 1 per person unless they are very large, get reds and yellows
mushroom- 1 pound per 4-6

Consider adding a cold salad such as corn-black bean salsa, 6-8 quarts
