Wedding reception for 175 people

Okay so our family will be making all the food for my wedding reception. We are estimating around 175 people. I am just wondering on an estimate for the quantity which we would need. It will be a served buffet style supper.

So we will be having ham, turkey, oven fried rice, rolls, and a different variety of salads.

ham, allow 3 ounces ready to serve or 4 ounces boneless per person; 1 cup raisin or apricot sauce per 6
turkey, allow 1/2 pound whole turkey per person; 1 cup gravy per 4

oven fried rice, about 16 pounds dry rice
If you have a quantity recipe you like, would you share it? This is a request I get from time to time.

rolls, 2 small per person, about 6 pounds butter

variety of salads
Do 1 1/2 time the amount on the plan for 100 page for the tossed/green salad; then 3 gallons each of 3-4 other salads

I would consider adding a veg, about 30 pounds, to this menu.
