|Cooking smoked pulled pork sliders and chicken posole for 100 guests, need to know how much dried posole and chicken, will be roasting whole chickens, and smoking pork shoulder
|When I make posole I use the canned hominy. I use 1-2 cups of ready to eat posole for each 1 1/2 pounds of whole chicken. Some people use double that amount. One 2 1/2-3 pound chicken will make about 8 people's worth of posole. Don't omit the lime wedges.
