Colecannon recipe for 80 people-St. Pat Day
Would it be a good or bad idea to try Colecannon with our corned beef dinner?
Hi, you had 2 related questions, so I will answer both here.

Colcannon is made with either cabbage or kale traditionally. Since kale is such a foodie darling thing right now, if you make it with kale you need offer no apologies, and people can eat more potato with less guilt.

Per person, 1/2 pound baking type potatoes and 3/4 cup chopped fresh or 1/2 cup frozen kale. Usw some real half and half in the potatoes and have about 3 pounds of butter for people to add on top.
