baking large amounts of boneless chicken breast
I have a Vulcan long will it take to bake 2 full trays of boneless chicken breast in each oven....approximately 35 4 ounce pieces on each tray and 2 trays in each oven
This is a convection oven. Preheat to 400. When fully preheated, place trays. Best results if you turn after 10 minutes, but you may choose not to. Start checking with a quick read thermometer at 25 minutes, then every 5 minutes.

The most accurate test of doneness is a quick read thermometer to test the internal temperature. Measure the temperature of a piece in the middle of the tray at the thickest part of the breast and do not let the tip of the thermometer touch the pan underneath. The chicken is ready when the internal temperature reads 160 F. Remove the pan from the oven and tent loosely with foil, letting the chicken rest for 5 to 10 minutes. The juices will redistribute through the meat and the chicken will continue cooking as it rests.
