Hi, Charlotte,

If you check out the plan for 100 lists, you will see that the amounts of single meats for 100. You just multiply. For 400 or more you decrease 10%, and if it is mixed meats, you have to add some since many people eat more, and some of each, when there a two or more choices.

Serving a buffet with brisket potato salad red chile casserole, beans and rice how much do I need of each item to prepare for 350 guest and my husband and I think 1/4 is sufficient for serving with other food being prepared . How many briskets would we buy? Or pounds would I buy

frances, a 350 person dinner requires 4-5 people in the kitchen and about 20 people out front to set up, serve and clean up the dinner. At least 4 serving lines, and 3 doublesided is better.

Brisket shrinks almost 40% with cooking or smoking; 1 pound raw serves no more than 3 people, and that is if someone serves the first round; otherwise count 2 pounds raw per 5. n addition, it requires a meatless entree, such as a crockpot full of Field Roast sausages or veggie patties, or the meatless enchiladas.

potato salad, 14 gallons
red chile casserole, assuming this is a red chile enchilada casserole, allow 2 tortillas per person and the rest to fill out the casserole recipe.
beans, 8 pounds dry per 100 or 3 gallons per 100
rice, 8 pounds dry per 100
