Pasta Salad Prep
You have already helped me with my quantities. I am making a pasta salad for 60 people and using 48 oz of pasta and then the add ins. I am looking for ways to do things ahead of time. I read that I can cook the pasta the night before, drain, run cold water over and then toss with oil and lemon juice 2:1 ratio per # of pasta. Put in bowl in fridge overnight. Finish salad in the morning. Not a mayo based salad! Have you done this before? Am I ok to cook the pasta the night before?
Yes, you can cook the night before, just be sure the pasta is just barely cooked through. If using oil based dressing, just use dressing instead of oil and lemon. Store in big baggies- easier than bowls to chill and to store.
