I am catering a graduation party for 35-40 people. I will be doing two kinds of tacos (chicken and carnitas). How much of each kind of meat do I need? Any ideas of how many taco shells (both hard and soft) and how to keep the soft tacos warm without them getting soggy?
You get no sog by letting the guests assemble their own. For amounts, use the taco bar for 100 page between 1/3 and 1/2 the amount for 100, depending on whether they are light or heavy eaters.
