Dinner for 25
I'm hosting Christmas Eve dinner for 25 and have decided to do it buffet. But I have no sense of quantities: How many 8qt chafing dishes am i likely to need for each hot item? For example, ravioli: will ravioli for 24 require a whole 8qt chafing dish, or would a 4-qt one suffice?
If you think of the "8 quart" chafer as actually holding about 24 cups, you will be able to do your plan. For example, a party size entree serving of ravioli is 1 1/2 to 2 cups, so the chafer will hold about 16 servings. On the other hand, mashed potatoes is about 3/4 cup, more than 30 servings, and veggies about 48.
