Dinner Party for 40

Hi Ellen,

I am having a dinner party for my parent's 60th wedding anniversary and I plan on serving a chicken dish, loaded mashed potatoes, roasted carrots and salad.

I have the chicken portions figured out (5 ounces per person) but I'm wondering how many potatoes and carrots I will need along with how many bowls of salad.
Thank you.

This will be a buffet style dinner and appetizers and dessert will be served as well.

20 pounds of potatoes is plenty. 10 pounds of carrots. Use the plan for 100 salad table and do a scant 1/2 for the salad. Make good gravy at least 3 quarts. Congratulations to your parents.
