I am planning to do a fruit tray and vegetable tray for 350 people. How much of each should I buy?
Cheese cubes
Crackers
Carrrots
Cherry or grape tomatoes
Broccoli
Cauliflower
Sweet peppers
Baby dill pickles
Celery
Chips and dip
Spinach dip
Grapes red and/or green
Strawberries
Pineapple
Cherries
I may not use all these but need an amount when I decide on which ones I should use

Edie, congratulations.
Look at the fruit tray page and the veggie tray page, Each explains how to estimate number of pieces per item (for example, bites in a standard size pineapple or pieces of celery in a bunch). Usually, about 5 pieces each, depending on what else is served. If just one tray, including both, about 8 pieces. Also, dip per pound is shown.

Chips, 6 pounds potato or 8 pounds corn per 100, 1 pint dip per pound.

It takes about 4 person hours per 100 to prepare trays from scratch
When you have prepared your estimate, post it, and I will check it for you.
