Ideas for Wedding Reception for 75

I have the majority of my menu figured out..with alot of help from this website. A few places I am just stuck on though...what to offer as side?

Hot ham-sliced thin for sandwiches
Shredded chicken for sandwiches (bbq sauce on side)
Hot Mac and Cheese
Potato Salad
Potato Chips
Appetizers:
Deviled Eggs
Roasted pepper & hummus in philo cups
Pepperoni /cream cheese olive
cubed cheese varities and crackers
relishes (pickle/olive/banana peppers)

This will be buffet style ..for a 5oclock dinner ..no alcohol served...appetizers only need to last for an hour b4 dinner...

I'm not entirely satisfied with the sides...should I add pasta salad? The facility has no means to keep food warm other than a microwave for a quick spot heat up. Chafe dishes and the meats and mac/cheese will be brought by cater

I would definitely head in a veg direction here. What about a room-temp marinated veg salad with artichoke hearts, mushrooms, other good things- about 1 1/2 gallons. Then a many bean salad, the room temp answer to the baked bean issue. Or 2 6 quart crock pots of a veg casserole/mix? Maybe something a bit exotic, such as a blend with frozen artichoke hearts, snow peas, baby corn and carrot strips?
