Keeping Salmon from drying out
Hi everyone,
I am catering a wedding and would like suggestions for 2 things.
1. How do I keep salmon from overcooking AND drying out while in a holding box for an extended time?

2. Suggestion for a light sauce to go with the salmon that has NO dairy.

Seriously about the salmon: talk them into serving poached chilled whole with a mayonnaise or pesto type dressing. Gorgeous for a summer wedding, very popular. Otherwise, single portions of salmon cooked ahead and held are going to be very difficult. If you must hold, do a poached salmon, not baked, and be very careful not to overcook.

A dill sauce or a teriyaki type sauce is a pleasant, non dairy option.
