need some help with how much of each on my menu i need to prepare
CHEESE TRAY AND FRUIT TRAY
HAM- 1 pound boneless per 4
FRIED CHICKEN- 1 piece per person
RIGATONI 12 pounds dry per 100, 1 quart sauce per pound, 1/2-1 pound cheese per pound
POTATO SALAD- 3 gallons per 100 since you have the rigatoni and beans also
BAKED BEANS-3 gallons (4 #10 cans) per 100
BROCCOLI SALAD-2 gallons per 100= 5 gallons. Consider adding a second salad such as carrot raisin, and then do 4 gallons of each total
CHEESE TRAY- 8 pounds per 100, 6 pounds crackers per 100
FRUIT TRAY- 2 of the deluxe tray for 100 would be enough
