Hi Ellen,
Thanks for this service. I have been asked to do sides for a company cook-out 200 ppl
They will have burgers and brats and they are making 20 # of pasta salad
I will be doing:
2 gallons cole slaw
4 gallons of potato salad
2 gallons broccoli-cauliflower salad
4 gallons of fruit
How are my quantities

4 gallons slaw- could do 2 each mayo and vinegar dressing
3-4 gallons broccoli salad

I would probably do 5 of potato salad, but it is not clear what volume the pasta salad will make- you want about 8 gallons starchy salads all together.

Be sure they make a dozen veggie burgers or 2 dozen veggie sausages- in that size group, there will be some non-meat eaters
