I need some help here- need to know how much to buy for each food item for 100 people.

Garden salad- tom. onions , cucumber ?
Chicken tenders, I was thinking 175 pieces ?
Mostacolli w. marinara, I was thinking 10 lbs
Fettuccine Alfredo 8 lbs ?
polish sausage / sauerkraut I was thinking 20lbs sausage?
Shredder It beef/ w rolls ?????
Veggie medley ??

MaryBeth, having 4 meats is a lot for 100, and means you either have leftovers or risk running out of the popular choice. Would you consider going to 2 or 3? Also, is the pasta dry weight of pasta or finished weight of casserole? Please write back.

It also helps to know the type event and age of guests.

This is for a 60th Anniversary. Some kids mostly adults.
The pasta I figured as dry weight.
I can eliminate the polish/kraut

These are good. One meatless for any vegetarians

1 pound prepped beef makes 6 buns. Start with 18-20 pounds of boneless lean beef

cocktail wieners - 10 pounds, 3 quarts sauce

For the Beef it will be shredded on a 4 inch roll, I did not mention that before. Same on the lbs?
Also, chuck or rump roast better in your opinion?

Yes. sill plenty. Only 5 per pound with these larger rolls. Consider adding 8 pounds sliced raw onions and a gallon of pickles.
I like chuck because I like a bit of fat. Rump is leaner. Both are good.
