Hi there...when baking boxed scalloped potatoes in an electric roaster is the time amount the same as listed on the box? I'm using the institutional size boxes...thanks
As long as you preheat the roaster covered for a least 20 minutes, and don't keep lifting the lid, it acts and times like a regular oven. The cautions are:
Does not dry out as much, so pay attention to liquid amounts.
Does not make a crispy top/ edge. In fact, when it is done and I turn it down, I spread a cotton dish towel over he top to catch condensing steam.
If you want a crisp top, canned French fried onions such as Durkees do quite well.
