Wedding for 300
I was asked to cater a wedding for 300. The menu consists of:
Stuffed pork loin with gravy
Macaroni and cheese
Baked apple cheese casserole
Green beans with brown sugar and soy.
Italian bread/butter

For the pork loin I’m planning on 150 lbs boneless pork loin. I will make a traditional bread stuffing.
For the apple casserole I’m thinking I’ll need approximately 200 C apples and 80 C cheddar cheese
I have no clue about how many lbs of dry macaroni - I’m guesstimating about 30 lbs? And 12 #10 cans of green beans?

Could you please tell me your thoughts? This will be a buffet but I will have servers.
