I was asked to cater a wedding for 300. The menu consists of:
Stuffed pork loin with gravy
Macaroni and cheese
Baked apple cheese casserole
Green beans with brown sugar and soy.
For the pork loin I’m planning on 150 lbs boneless pork loin. I will make a traditional bread stuffing.
Could you please tell me your thoughts? This will be a buffet but I will have servers.
