Max, for party/dinner mixed beef and chicken fajitas, most caterers allow 5 ounces cooked lean boneless beef and 3 ounces cooked checken. You buy about 2 pounds bobeless raw lean beef for 5 persons, about 1 pound boneless skinless chicken for 4 persons. The toppings are about like the baked potato bar toppings- see the button at the top of the cook talk page.

Jan, even for this large a group, fruit trays are easier to assemble and refill. Fruit salads get picked over and get droopy. See the article on fruit trays (button at the top of the main cook talk page) for advice on quantities fruit selection and substitutions. If you are buying pre-made fruit salad, the amounts are there for both meals and receptions, also.

Hosting a kosher brunch for 25. How much lox should I order? For that matter, how much egg salad (lb), tuna salad (lb), bagels (pc), cream cheese (lb), quishes (pc), blintzes (pc), fruit salad (lb), breakfast potatoes (lb), juice and of course, lox (lb)would I figure per person? Everything to order is either by the pound or by the piece. Thanks for any input!

Jennifer you want about 1 1/2 pounds food per person.
Did you look at the breakfast plan for 100 chart? for 25, you want 1/4 the amount for fruit salad, potatoes, juice; if you think it will be 30+, use 1/3. Go light on the breakfast potatoes if they are potato knishes.
Per person:
1 each knishes and blintzes
1 1/2 bagels and 3 ounces cream cheese- you will have some left, but that is better than running out
1/3 cup each tuna and egg salad
3 ounces lox
You must also have capers and sour cream with the lox, and sour cream and applesauce with the blintzes.

I would aim for 4-5 ounces ready to eat beef PLUS 2 ounces ready to eat turkey PLUS 2 ounces ready to eat ham per person. You have to have extra because you can't run out of the first choice on the first round. Also, be SURE that it is written in to the contract that you are serving per person, or they may expect you to leave them all the remaining/left over meats (unless you are selling them trays or pans, in which case they do keep the remainders).

2-3 ounces lox per person. 4-5 ounces ready to eat salmon per serving (that's about 2 pounds raw for 5 people. I don't know how you are serving the whitefish, if it is baked/etc, it is like salmon; and the salad, 1/2 to 2/3 cup is an entree serving. I can't help on how many of each type you want, that depends on the taste of your particular crowd. You want about 36 servings total for 30 people, especially with multiple entrees.

See the fruit tray page and look at the tray for 25. I would change it up by using 2 3-4 pound pineapples, about 4 pounds seedless grapes and about 6-7 pounds of clementines for each 25 people. Use several colors of grapes and consider using some strawberries for color, add a mint leaf garnish.

20 pounds slaw veggies makes enough for 100. Here is an interesting dressing:
Dressing for 15 pounds
1 1/3 cup mayonaisse OR plain low-fat yogurt
1 1/3 cup canola oil
3 1/2 cups vinegar
1/2 cup honey, or more to taste
3 tablespoons paprika
3 tablespoons caraway seed
1 cup fresh dill weed, chopped
1/2 tablespoon celery seed
1 tablespoon salt
1/2 tsp pepper
At least one day ahead, combine dressing ingredients and whisk until well blended. Taste for balance, adding extra vinegar or honey if needed. Chill.
In a very large bowl, combine cabbage, carrots, onions, celery and parsley. Mix well. Chill.

Ah, the famous pancake mix question! Just in time for Shrove Tuesday.
The mix you plan to use has a serving size and weight on it. If the serving size agrees with your planned size, use this, adding 10% if your numbers are pretty firm. The mix makes better pancakes if prepared and refrigerated the night before. There is a breakfast planning table for 100. Button at the top of the main cook talk page.

Lisa, No, especially if it is buffet/ self service. You need to count on 5 ounces ready to eat bee PLUS 3 ounces (1 small) chicken breast PLUS 2 ounces veggie lasagna for EACH person, if you want to be sure to have enough and that everyone gets their first choice. Almost 2/3 of the people will take roast beef plus something else on self service.

Steve, it depends somewhat on the age of the crowd, the length of the party and whether alcohol is being served but 1/2 pound EACH raw ribs and raw brisket is about the minimum.

Taylor, all these foods are covered on the appetizer planning page and the plan for 100 tables. There is also a discussion of how much the time of day affects the amounts you need. You use 1 3/4 times as much as you would use for just 100 people. Make your estimates. Then if you want to post it, I will check it for you.
Dana, If you have no other starch or vegetable, you need one cup per person. I would add at least a fruit salsa or spiced apple or peach, this is a light menu for mostly men.

Ceri, a party this size with this extensive of a menu usually requires at least 4 chefs, a commercial kitchen with at least 4 ovens and 18 servers. What do you mean you are doing it yourself? Please write further.
Also, I assume you know it is not legal to prepare food for sale in the home kitchen? And that you need a legal contract and event/liability insurance for this party?
As I have explained several times on site, this site is for family cooks, and not for professional (paid)caterers, so I don't do estimates for catering. I recommend chef2chef.com for pro caterers.

I would allow 1 pound ribs per person plus one piece or quarter of chicken; you will have some left, but everyone will get their fill and their choice. Caterers usually make food 30% of their cost and expect about 6-8% net profit- you have to pay your help, buy equipment and supplies as well, etc.

Lucy, I can't figure out what you are making and whether this is the only appetizer. Off the cuff, you want 1 ounce of bread, 1 ounce of cooked chicken, 1 teaspoon of pesto, 1 tablespoon of avocado, 1/2 ounce of cheese for each bite. You have to write more info if you want help.
Charlotte, OK If this was me, and about half the guests are your mom's age, I would count this as just 50, and not add for extras- elders don't eat as much. I would do 1 drumstick per person, PLUS 3 ounces ready to eat salmon (about 9 pounds whole) PLUS 2-3 ounces of sausage PLUS 3 ounces ready to eat ham PER PERSON; you will have some left, but the problem with serving this many entrees to 50 people is you need to have enough that everyone gets their first choice, and it doesn't even out the way it does in a larger group. You can make a pasta or vegetable dish that will serve as an entree for vegetarians and a side for everyone else, this simplifies the entree issue a bit.

You are short for 30 people unless they are very light eaters. A serving of rice is 1/2 to 3/4 cup, beans 1/2 cup, guac 1/3 cup, salsa 1/4-1/3 cup. Following minimums:
4 pints beans- 8 pints
4 pints rice- 10-12 pints
4 pints guacamole (all in 13x9x5" pans)- 10-12 cups
3 pints salsa- 4-5 pints

Missy you can use my tables for 100 by taking 2/3 the amount for 100. You will need about 14-15 pounds of plantain and your two rices should start with a combined dry rice weight of 5 pounds of rice. Hi, I'm having a birthday party for my daughter and it's my first time throwing a party so I'm clueless! At the very most we will have 39 people but 12 of them will be children ranging in ages from 1-10. I plan on serving pizza, breadsticks, salad, and maybe fruit pizza and cake, of course. I think I read on here that you estimated 1/2 pizza person but of course the children won't eat that much. Do you think 15 pizzas would be enough? Also, how many breadsticks do you think I will need. And what about fruit pizza? I was thinking 5-6 because I think one is supposed to serve 8 people.

You need 1/3 the amount for 100 for this party. Figure 1 pizza for each 4 kids and 1 for each 2 adults. You don't need both fruit pizza and cake, but if you do have te fruit pizza, 3 would probably be plenty.

Krista, because it is popular and shrinks, you need to allow 1/2 pound per person, even though you also have chicken.
Jalene, the large cans do not contain a gallon! 4 cans is three gallons, which is the minimum for 100 people, if there is another vegetable; if it is the only vegetable. I allow 5 per 100. So you can figure it and remember the catering rule- always round UP if you have a fraction.

Kyndal about 55 pounds whole raw. 1/4 cup gravy per person would be plenty with this many being kids.
Rosie, I can't do the food unless I know the whole menu. It sounds like a brunch, but could be a reception?
coffee per the breakfast coffee on the beverage page. Mimosas, allow 1 cup per person. Fruit tea? Iced or hot? If iced, it will be mostly used by folks who don't drink mimosas. 3 gallons should be enough, plus plenty of ice.

ham biscuits, if these are pre assembled, you need 1 per person plus 10 percent. If you are serving the biscuits and ham separately, which I suggest, I would do 2 smallish biscuits per person (and skip the croissants) plus 2 slices of Canadian bacon or 1 1/2 to 2 ounces (2 little slices) ready to eat ham per person.
shrimp & grits, people will eat all the shrimp you offer. 3 1/2 to 4 1/2 pounds grits (depending on whether your guests are grits eaters), at least 12 pounds of shelled, head off, tail off shrimp
spinach fritata, 8 dozen eggs
turkey bacon, 2 slices per person
turkey links, 2 small per person
cinnamon rolls, muffins, danish, mini croissants;
get the smallest ones, about 90 each small rolls and mini muffins, 120 small Danish, skip the croissants and use the good biscuits as discussed in the ham biscuit section. Have honey, butter and jam for the biscuits

may I start over....I now have 150 persons to feed.I will use the same menu from 11/16/09 minus the mimosas, cinnamon rolls, and danish.
I am making the biscuits and filling them with ham. I need to know how much ham I need to buy to fill 150 biscuits and what kind of ham to buy.
I need to know how much fresh spinach or how much frozen spinach (I dont know which one I will use yet) I would need to make spinach fritattas for 150 persons.
How much of each Muffins and croissants for 150 persons. These muffins will not be mini or jumbo but regular size. Same with the croissants.
How much clean uncooked shrimp will I need for the shrimp and grits for 150 persons, this recipe also has cheddar cheese, how much will I need? The shrimp & grits recipe also has bacon in it, how much bacon will I need for this dish for the 150 persons. Thank you again and sorry for the inconvienience.

Gloria, Shank is easier to carve, usually a bit less expensive. Bone in raw weight, about 35 pounds minimum.
Rosie, I am puzzled. For 150 people you just use 1 1/2 times the amount for 100 people; for example, you would want frittata with 12 dozen eggs. The amount of spinach depends completely on the recipe you are using for th 12 dozen eggs, andf I don't have your recipe. Same for the bacon in the shrimp recipe. Multiply your recipe to get the right amount of shrimp, and you get the right amount of bacon.
I think you are making a mistake keeping the croissants and eliminating the Danish and cinnamon rolls, the quality of the latter two is usually better than the quality of commercial croissants, and people like them better.
You can use any kind of ham. Country ham (Smithfield type) is the fanciest, but for the extra the trouble and expense is not that much better than a good regular ham. Do get "ham" or "ham with natural juices" and avoid the ones that say water added.
